Egg Cup

Hey kids. Here is a handy little idea I picked up from the fam over the holidays. It's a great way to play hostess, and eat eggs!

You put thin slices of deli ham in a muffin tray (as many cups as you would like to make), and then some olive oil and fresh spinach at the bottom. Crack an egg in there, sprinkle on some cheese if you'd like, and pop in the oven. 10-15 minutes should do it, depending on how runny you like your eggs.

And you've got these adorable, individual serving egg cup things! Pretty cool, I think, and allows plenty of room for improvisation. Have fun!

does the egg come out easily or is it a project to evict the little bastard? can dough be placed in the recipe you think?

i would put some pam in there for good measure. i don't know about no dough.

My god that sounds good. It's also probably just about the only thing I can make with what's in my refrigerator right now.

I wonder what would happen if I put mini english muffin halves in there somewhere...

WHAT ARE MINI ENGLISH MUFFINS

k said...

i'm sorry but i seriously don't understand

it is probably because i'm avoiding saying "muffin cup" because i dont want you to think that i mean to put the ham in a paper muffin cup. you put the ham slices in the cups of a muffin tray and then fill it with stuff. yes?

k said...

no i'm sorry, i really don't understand. what does it have to do with eggs?

CaseyMustPie said...

now you are just being difficult. you crack an egg in it. an egg. this is upsetting.

I UNDERSTAND IT. I UNDERSTAND THIS WHOLE THING.

My mother mailed me mini English muffins that my dad got from people at work for the holidays. I really love them a lot.

Also, I have cinnamon raisin English muffins, but they are regular-sized and thus not nearly as delightful.

jesus thank you. okay i looked up mini english muffins and they do exist! also, I had cinnamon raisin EMs when i had the egg cups and it was very good.

but how does it come out as a cup if the outside layer is ham?

CaseyMustPie said...

it just does. because it is cooked. maybe i should call it ham cup. of egg.

Ham Cup of Egg. I'm mystified that they come out in a cup shape, but I always believed in it.

so the ham becomes a cup with an egg inside of it? do you eat it with your hands? i really don't understand, can someone find a picture?

found one

I'm attempting to make this right now, but it doesn't seem to look like the picture K found. I think my cups aren't deep enough. :-( I anticipate it being messy...

Okay yeah, this is really good. I also added some cut-up french fries, which was a good move.

NOW I THINK I'LL HAVE SOME KUGEL.
